  • Celebrity chef set to cook up a storm at Southport College

    TV CHEF Tony Singh has been sharing some kitchen secrets with youngsters in Southport this week ahead of treating diners to one of his classic crossover menus.

    Tony is starring at a guest chef evening at the rooftop Clouds Restaurant, where he has spent two days with students preparing a speciality meal.

    Tony’s visit is the result of his friendship with tutor Colin Roberts from Southport College where Clouds is based  – the two have stayed great pals since they worked together as budding chefs at Edinburgh’s prestigious Balmoral Hotel in the 1990s.

    Scottish-born Tony, now MBE, was an immediate TV hit in Ready Steady Cook in 2008, became a genial presence on BBC's Great British Menu and was recently one half of the Incredible Spice Men with Cyrus Todiwala.

    He is a passionate promoter of Scottish produce with a worldwide outlook  – his Wednesday night (February 1) menu includes fish and lamb with Punjabi, Peruvian and North African influences, even ice cream dessert with a hint of chilli.

    But first Tony spent Tuesday daytime (January 31) with students choosing ingredients, including a visit to Wesley Fish in Tulketh Street at 10.30am.

    The event is yet another scoop for the Southport College restaurant, which last summer saw four top chefs preparing a gourmet menu.

    Wednesday night’s event is a sell-out but hopes are high for a further big name to host a special menu in May.

    Clouds is open to the public with hospitality and catering students working under the supervision of professional staff.

    He has also been ITV Chef of The Year and Scottish Chef of the Year.
